Pistachio Faux Latte - A Blue House “How-To”

Today’s blog post is short and sweet, simply us sharing our love for creative coffee drinks with you. We’ve discovered a nut milk faux-latte that can be made at home with no special equipment other than a blender, a saucepan, and whatever equipment you normally make your coffee with. For our coffee, we used pistachios, but you can just as easily use almonds or cashews. Let’s begin!

Ingredients

  • ¼ cup shelled pistachios, roasted and unsalted

  • 1 ½ cup brewed coffee

  • 1 Tbsp. honey or 1 pitted date

  • Splash of vanilla extract

  • Pinch of sea salt

  • Pinch of ground cardamom (optional)

Instructions

Remove the shells off of the pistachios and soak them in hot water for an hour. Then, peel off their skins. Grind up the nuts (we used a mortar and pestle) before placing them into the blender for the best results.

*Note* The pistachios take an hour to soak, so begin this process before the time you intend to drink your coffee.

Place your pre-brewed coffee and whatever sweetener you’re using into a saucepan and simmer over medium heat. We used a date for our sweetener because of its unique flavor, but honey will do just fine.

Add the coffee, vanilla extract, salt, and cardamom into the blender with the pistachios and blend!

*Note* Blend together longer than seems necessary, to be sure that the pistachio is fully blended into the drink.

Serve in your favorite mug and enjoy!
